Makhmalli Choliya Kabab



As soon as we hear the word kabab..naturally we think of some non veg bite…but I am sure veg kababs r equally..rather more delicious. Kababs have their origin from Lucknow……well ..u can try u r hands on lots of veg ones… …Choliya or the green channa r  available only for a very short time n r supposed to b a delicacy….so have tried a yummy kabab with choliya n paneer……and yes in case u don’t get the fresh ones soak the dried ones overnite n pressure cook with salt…they taste equally good...n   u can substitute paneer with tofu .n now the recipe……

2cups………………choliya
1cup………………..grated paneer
4 -5…………………green chillies
6-8………………….cloves garlic
2inch………………..ginger
½ tsp ………………..garam masala
2tb sp………………..besan(gram flour)
Finely chopped corriander
Salt to taste
Garnish…..onion rings
                   Lemon wedges
…………...chaat masala


Boil chana with salt.
Make a paste of ginger garlic n chilly.
Mix everything in a bowl.
(Plz mash the chana coarsely)
Now take a small ball of the prepared dough ,flatten it.
Wrap this around a greased pencil,press to give the kabab shape.
slide out the pencil.



 
Shallow fry.
Sprinkle chaat masala n lemon  juice.
These can b deep fried…..n yes u cud use ur tandoor too!!
These kababs r super soft…n they just melt in u r mouth.
