Rice Noodles / Sticks with Veggies


BM # 5   Day 6

Today I  am coming up with a breakfast from the South.The first time I had rice noodles was in Sri Lanka.Ever since my husband and I have become great fans of this lovely healthy breakfast.
We rarely get rice noodles here in Gujrat so everytime my daughter travels from Chennai she gets them for us,but sometimes   you do spot them in supermarkets Recently while hunting in the supermarkets I spotted rice sticks!!...a Malaysian brand…I picked it up…these were flat strips instead of the round noodles with a similar taste.


1 packet…….rice noodles / sticks /vermicelli
1cup………...boiled mixed vegetables
2tsp…………oil
¼ tsp……….musturd seeds
2……………finely chopped green chilly
2……………dry red chilly
2-4 tsp……...peanuts coarsely ground
Few…………curry leaves
1tsp…………lemon juice
Salt to taste

Boil the rice noodles with salt.
Strain.

Heat a pan .
Add oil
Add mustard seeds,greenchilly,red chilly, curry leaves and peanuts.
Add onions,sauté till translucent.
Add boiled vegetables sauté for a few minutes.
Add the noodles and some lemon juice.
Toss gently.
