Mango Vaghariya

BM # 8   Day 5
A sweet n sour chutney from Gujarat.It’s best enjoyed on summer nights wen u r feeling hot n don’t feel like cooking…just remove the chutney from the fridge or from ur chutney rack…n eat with khakhras..roti or baakhri…..its light n delicious.
1cup……………….......raw mangoes
¾ cup ………………....jaggery
1tsp……………………red chilly pwd
1tsp………………...…dhania jeera pwd
¼ tsp…………………..turmeric pwd(optional)
Salt to taste

Vaghaar
2tb sp…………………oil
1tsp…………………...mustard seeds
1tsp …………………..cumin seeds
2…………………….…whole red chilly
Pinch hing

Heat oil.
Add vaghar ingredients.

Add mango pieces.Saute for a few mins,add salt .cover n cook for 2 mins

Add jaggery.......let it melt ,once it reaches one thread consistency add spices n cook for 2 mins


Store in a airtight jar.

Stays best for 1 month..but ofcourse u can easily store it in the ref for a longer period.

  4. Similar to what we make as Mango Thokku . Wish I had raw mangoes on hand now to make this quick yummy dip !
