Cheesy Corn Rice

BM # 13   Day 2

Children love corn, boiled or roasted.I remember  my children relishing anything with corn.Infact till date whenever I have to pack rice for my son to take to college these are on the top list.I know I don’t have to ask him  and he will need a bigger lunch box on the day he takes these Cheesy  Corn Rice or else he has to eat mess food.You think anyone can resist these?

Simple and real quick,here is the recipe…..


1cup........................ rice
1................................small onion finely chopped
2tbsp....................... finely chopped capsicum(you could use all colors)
½ tsp....................... chilly flakes
1tsp .........................oregano
¼ cup...................... boiled corn kernels
2-4 ...........................olives chopped
2tbsp...................... grated cheese
Salt to taste

Boil rice with salt either in a pan or rice cooker.
Heat 1tsp oil in a pan.
Add the chopped onions and capsicums.Saute’.
Add corn kernels,rice and the herbs.
Toss well.
Place these in corn leaves spread olives and cheese.
Seal the rice packet with toothpicks.
Place on a gridle for a few minutes or bake  for a while till the cheese melts.
Of course you could just add olives and cheese in the pan too for a quicker version.
