Achaari Petha


Achaari sabzi’s are my favorite ones, then they may be from paneer, aaloo . gheeya or Arbi.To this list I have added petha, or Pumpkin.

As a kid I knew Pumpkin by the name of Kaddu, but over the years I have learnt many names for this versatile squash.Today I have made achaari petha , which is very popular with Rajasthani's.This is a simple dish, which is best enjoyed with poori or a ghee smeared roti.This goes to Magic Mingle# 9.Quick simple yet very delicious!..check out the recipe……

250 gms............ pumpkin
2tsp................... pure ghee
1..........................bay leaf
1tsp................... paach poran masala
3-4 ......................whole red chilies
Pinch asafetida
1tsp ....................coriander pwd
½ tsp.................. red chilly pwd
½ tsp.................. garam masala
¼ tsp.................. turmeric pwd
¼ tsp ..................dry mango pwd
Salt to taste
Clean and chop the pumpkin into small cubes.
Boil them with salt.
In another pan heat ghee, add paanch poran ,hing and red chilies.
As soon as the seeds crackle add the boiled pumpkin.
Add all the spices and cook on full flame, till no moisture remains.
Place on very slow fire for 2-3 minutes , so the spices seep in.
Serve hot!

Notes
Paanch poran is a mix of mustard seeds, cumin seeds, fennel seeds, onion seeds and fenugreek seeds.If you don’t have the ready masala, you could mix these seeds and use.

The same dish can be prepared in a sweet and sour version..
When the dish is ready, add 1tsp of jiggery or sugar  and a few drops of lemon juice .Cook on slow fire for 2-3 minutes.
