BM# 21 Day 2
Our neighbors are from Saurashtra, the southern part of Gujarat.The food that they
eat is quite oily and spicy, but very delicious.That kind of food can be eaten
only once in a while.I enjoy that food, but remove the layer of oil from
top.They make a khichdi, which is mind blowing. The name khichdi normally puts
you off, but this one is like WOW!! , I decided to prepare it for the second day of the BM. I called her to get this delicious recipe....
1cup........... rice
½ cup........ .moong
daal, yellow
1tbsp ..........chana
daal
1tbsp.......... tuver
daal
1....................bay leaf
1tsp .............cumin seed
2-4 ...............cloves
1’’ piece..... cinnamon
2-3............... red
chilies, dry whole
Pinch asafoetida
1cup ............mixed
vegetables (potatoes, beans, carrots, peas )
½ cup.......... spinach, washed and finely chopped
1....................tomato,
roughly chopped
¼ tsp........... turmeric pwd
1tsp............. red
chilly pwd
Salt to
taste.
Wash rice
and daals and soak them for 30 mins.
Heat ghee
and add cumin seeds, cloves, bay leaf, cinnamon stick, red chilies and
asafoetida.
Add the
vegetables, except spinach and tomato.Saute’ .
Add rice and
daals, mix in the spices and salt.
Mix well and
let all the moisture dry.
Add about 4
cups water and pressure cook for 1 whistle.
Reduce the
flame and cook for another 10 minutes.
Once the
pressure is released, add spinach and tomato.
Give it a
good stir.
Adjust the consistency
according to taste.
Serve hot drizzled with pure ghee.
You actually
do not need anything along with this Khichdi, but you could serve lassan ki
chutney , papad, chaas or pickle, according to your preference.
