Mini Burgers with Lotus Stem Patty

Burgers are a hot favorite with our family and I make them very often. The interesting part is that every time Burgers are made we have a different patty.It is rare that we have the usual Aaloo patty, though it is my favorite.For this months challenge at Groovy Gourmets our challenge was to make a burger, with a unusual patty. Since I make so many different patty's ..I actually did not get the feel of a challenge.So I decided to make a patty which would be unusual for a burger.I choose lotus stem as the base of the patty.

Lotus stem is found in ponds and is full of mud. It can be rather tedious if the stem is really muddy.It has to be cleant well.Please check here as to how to prepare the stem so that it is free of mud.

Lotus stem patty are made in Sindhi houses and are considered rather exotic.I used hung curd instead of the usual cheese, added onions and tomatoes for crunch.The spicy green chutney gave it a kick as there was no other major dressing. I used mini burgers instead of the usual big buns that I normally use. In fact these mini ones took every one by a surprise as I always make Big Fat Burgers. They looked cute and we all relished them a lot.

250 gms lotus stem, boiled
2 potatoes, boiled
2-3 green chilly, chopped
1 tsp ginger garlic paste
1/2 tsp red chilly powder
1/2 tsp garam masala
1 tsp coriander seeds
1 tsp pomogranate seeds( anardana)
Coriander leaves
2 slices bread
Salt to taste
Peel , clean, chop and boil the lotus stem.

Mix together the boiled lotus stem, potatoes and rest of the ingredients.
Soak and squeeze the bread slices.
Mix them with the rest of the ingredients.
Mash and mix well.
Adjust the spices according to your taste.
Pinch out balls and flatten them to form patty's.
Roll them in semolina flour and deep fry till golden.

1 cup hung curd
1/2 onion, finely chopped
1 tomato, finely chopped
Coriander leaves
Salt to taste
Mix all ingredients and make a spread.

Assembling the burger
Cut the bun into two.
Apply butter on both sides.
Place a cabbage leaf on one piece.
Apply the spread lavishly.
Place the patty.
On the second piece apply the spicy green chutney .
Cover the first piece with the second and apply butter on the top of the bun.
Place on a griddle and roast it lightly on both sides.
Insert a tooth pick and serve.
