Baking is a skill and surely can be mastered , how ever we need to follow a few essential rules which should be followed carefully.

Firstly we should choose a time when we can work without distraction.
Read the recipe carefully and get all the ingredients on the counter.
Weigh and prepare all ingredients before you start.

Sifting
Always sift the flours, there may be unwanted particles.
Make sure to sift with baking agents.
Sift at least twice, it incorporates air.

Ingredients
All ingredients should be at room temperature for best results.

Unit of measurement
Always follow the same units of measurement throughout the recipe.
Use either metric or imperial , but never a mixture of the two.

Adding Nuts
Always add nuts , raisins, chips etc at the end.
This will ovoid over mixing.
The tutti fruity should be mixed with a tsp of flour.

Oven
Always pre heat the oven for at least 10 -15 minutes.
Do not open the oven during the first half of baking.
It will hinder in the rising of the cake.

Check
Test your cakes for done ess while they are still in oven.
Always insert a toothpick in the center, it should come out clean.
The baking time given in each recipe can only be used as a guide, as every oven varies.
Check the cake approximately 5 minutes before the end of the baking time.

Cool
Always cool cakes in the pan for 10-15 minutes, before loosing the edges and inverting them.

Cut
For perfect and clean cuts, run a sharp knife through an open flame, or under hot water. Wipe the blade and reheat between cuts.

Chill
Chill the cake for half an hour before filling and frosting.
When applying multiple layers of frosting, refrigerate between applications.
