Eggless Carrot and Orange Cake

Week 2 begins and this week I shall be posting some Tea Cakes.
First in the list is a Carrot Cake. This is my daughters recipe , in fact she was the one to make for me. This is such a healthy cake and she makes it very often for my granddaughter's lunch box. This is a perfect recipe which never fails and you can try with great ease.

The orange marmalade takes the carrot cake to a different level, the desiccated coconut is optional, we liked it a lot but can be omitted too. The cake is delicious by itself.




Carrot and orange cake
2 cups APF
2 medium sized carrots, grated
1/4 cup oil
1 tsp baking powder
1 tsp baking soda
1 can condensed milk
Beat condensed milk for about 3 minutes, till fluffy.
Add baking powder and baking soda to the flour and sieve it.
Keep flour in a bowl, carrots in the second bowl and oil in the third bowl.
Slowly add little of each from these three bowls and keep beating.
Lastly when done put the batter in a greased baking tray .
Bake at 160 deg C for about 40 minutes.
Serve with orange marmalade and desiccated coconut.
