Theme of the week : Tea Cakes
For Day 2 I have a very healthy tea cake . This is one of my favorite cakes, which has APF in the original recipe, but I substituted it with whole wheat flour. It gets slightly dense but does not vary the taste. The puréed dates give it the look of a chocolate cake and most people cannot even make out that dates have been used.I have used almonds but walnuts taste equally good.
This cake tastes best as it is just with a cup of tea or coffee.
I also love serving it with vanilla ice cream and my guests love it.
Date and Almond Whole Wheat Cake
1 cup whole wheat flour
1/2 cup APF
1 baking powder
1/8 tsp baking soda
1 cup water
1 cup sugar
1 cup dates
1/2 cup oil
1/2 cup almonds
Remove the seeds from dates.
Boil water, add the dates and 1/8 tsp of baking soda.cover and let it sit for a while.
Sieve the flour and baking powder.
Beat oil and sugar till creamy.
Add the dates along with the water and beat along with the oil and sugar.
Add vanilla essence .
Slowly add the flour and mix
Add in the almonds.
Pour into greased and lined baking tin.
Sprinkle chopped almonds and pistachios.
Bake at 180 for 35-40 minutes.
Let cool before inverting.
