Eggless Pancakes with Coconut Syrup

The Hawaiian's are very fond of pancakes and while making their most popular breakfast Loco Moco I decided to make these pancakes as well. These are very popular for breakfast. Coconut is one of the tropical fruits of Hawaii and coconut syrup is what they like to top their pancakes with. They drizzle some nuts too. 

The coconut syrup that I made tasted amazing, but became a little thick by the time I clicked . The combo of the soft fluffy pancakes and coconut syrup was absolutely delicious. I garnished these with some roasted almonds.

These pancakes are a part of the Hawaiian Breakfast that I made for Buffet on Table.

Eggless Pancakes

1 cup all purpose flour
1 cup milk
1/2 tsp salt
1 tbsp oil
1 tbsp baking powder

Mix flour , baking powders all and sugar with a whisk.
Add milk along with oil, mix gently.
Set aside for 10 minutes.
After 10 minutes, mix again .
Heat a non stick pan and grease it lightly with butter.
Simmer the gas and pour a ladleful of batter.Do not spread.
Wait till bubbles pop over the pancake and the color changes.
Flip carefully.
Cook the other side for a minute. 
Remove and serve with your choice of syrup.
Repeat with the rest of the batter.
Make sure the pan is not overheated.
Always cook on medium to low heat for best results.

Coconut syrup

200 ml coconut milk
1 tbsp corn starch
2 tbsp sugar or to taste
1 tbsp shredded coconut

Whisk together coconut milk and cornstarch till well dissolved.
Add sugar and bring it to a boil.
Add the shredded coconut.
As soon as the milk comes to a boiling point remove from fire.
Cool and serve.
