Kappa, a green from Uttarkhand


This is a green curry that is served for lunch or dinner and is eaten with Bread, Pita, Roti & Boiled Rice. This is a dish, which is very sumptuous as well as nutritious since it is a special preparation of Spinach. This green is very popular in the hills of Uttarkhand.

Ingredients :

500 gms spinach
150 gms curd
1/2 tsp chilly powder
1/4 tsp turmeric powder
1/4 tsp cumin seeds
Pinch asafetida
1 tsp rice powder made into a paste with water
Salt to taste
1 tbsp ghee

Method
Wash the Spinach and chop it roughly and boil. 
Heat the Ghee add cumin seeds and asafetida. 
When seeds crackle, add chilly powder and turmeric powder. 
Fry the spices well. 
Add boiled spinach and cook a little. 
Add beaten curd.
Add the rice paste, stirring continuously.
Simmer and cook for a few minutes.
