Yellow Thai Curry with Steamed Rice

Thai curry refers to dishes in Thai cuisine that are made with various types of curry paste. A Thai curry dish is made from curry paste, coconut milk or water, meat, seafood, vegetables or fruit, and herbs, of course the vegetarian version is different.They use of fresh ingredients such as herbs and aromatic leaves over a mix of spices. I have already made the The Thai Green Curry and The Thai Red Curry, so I decided to make the Thai Yellow Curry. 

Depending on the type of curry, additional ingredients for the paste can include spices such as turmeric, pepper, coriander seeds, cardamom pods, and cumin, and fingerroot. The ingredients for the curry paste are ground together, traditionally with a mortar and pestle. The paste is then sauted in oil and coconut milk is added. One can add vegetables according to your taste.

The Thai yellow Curry or for that matter any of the other Thai Curries are either served with steamed rice or noodles. This is one classic combo that is popular all over the world. I chose to make this as one of the international combos for The BM Buffet, under Classic Combo theme.

The first time I made Thai Yellow Curry I was all set to click , but some how I was so pressed of time that I just could not. This is a curry that my hubby really liked, soI knew I could make it without any hesitation. The curry is simple yet very flavorful. One can really enjoy it on a cold winter evening, but I served it on a nice rainy evening, which was as good. Coming to the Yellow Curry.


The curry paste

Ingredients
1 small onion
2 tsp coriander seeds 
2 tsp cuminseeds 
1/4 tsp black pepper 
1/2 tsp turmeric powder 
2 fresh red chillies 
1/2" ginger or galangal 
2-3 cloves garlic
2 tbsp coconut milk 
1/2 tsp lemon zest / 2 kafir lime leaves
1 stalk lemon grass
1/2 tsp lemon zest

Method
Add all ingredients mentioned for the paste in a blender and make a smooth paste.

Vegetables that can be used

1 small carrot
8-10 baby corns
1 small red bell pepper, diced
1 small head broccoli / cauliflower
Few pieces cottage cheese / tofu

Other ingredients
2 tetra packs coconut milk
2 cups vegetable stock
1/2 tsp brown sugar/ sugar
1-2 tsp soy sauce
1 tbsp chopped basil
Salt to taste
2 tbsp oil

Method
Heat oil.
Add the yellow paste and Saute for a few minutes.
Add the coconut milk.
Add the vegetable stock.
Add sugar and salt . Let boil.
Add the vegetables and let simmer , cook till the vegetables are cooked , make sure they are crisp and not over cooked.
Add soy sauce and garnish with fresh basil.
Serve with steamed rice.
