Spinach OmeletServes : 1
Recipe Adapted from : Mr Breakfast
250 gms spinach, finely chopped
1 tbsp finely chopped garlic
2 green chilly, finely chopped
1/2 cup chick pea flour
1/4 tsp curry powder
1/8 tsp red chilly powder
Salt to taste
Wash and chop the spinach very fine.
Heat a tsp of oil in a non stick pan.
Add the garlic and let it turn pink.
Add green chilly and spinach.
Let the spinach wilt and let all the moisture dry up.
In a boxing bowl, add 1/2 cup chick pea flour, curry powder, red chilly powder, cooking soda and salt.
Add just enough water to make a soft batter.
The consistency should be like pancake batter.
Pour this batter over the cooked spinach and simmer the gas.
Let cook on one side, flip over and cook .
Drizzle oil while flipping.
Cut into pieces and serve.
We normally make these vegetarian omelets, but making it with spinach and garlic was new. It tasted really good and everyone appreciated as it had a health factor to it. People who eat eggs can proceed in the same way but instead of the chick pea batter add four beaten eggs.
